A few days in the Springs

Oh Palm Springs, how I missed you so…

If you have been following this blog you know that we spent a lot of time at a vacation home in the beautiful city of Palm Springs last summer. Spring is here and its starting to warm up, so we took advantage of the weather and headed down for some fun in the sun.

It wouldn’t be the same without amazing food. When we were at the market buying our lobster tails…I had the idea of making “Jaiva” (hi-va).

Your shopping list:

Baby Shrimp

Imitation Crab Meat

Cilantro

Cucumber

Ripe Jalapeno (optional)

5+ Lemons

Tomatoes (optional)

White Onion

Salt

Chile Powder (optional)

Tapatio (optional)

Lets get started.

You will need to rinse your shrimp really well with cold water.

Add to a large bowl.

Shred crab meat, then add to bowl.

I know the shopping list I provided has jalapenos and tomatoes but I left them out because I knew Jude would not be able to enjoy it with us if they were in the mix. You would now chop up the cucumber, onion and cilantro and add to bowl. Now for lemon juice, salt, chili powder if you are using it…will be added then seafood salad will need to be tossed.

This is a sour dish…so the more lemon the better. If you can wait…I recommend sticking it in the fridge for at least 2 hours before eating. This will allow the lemon to soak into the shrimp and crab meat. I serve the “jaiva” with tortilla chips.

After dinner, it was time for a nice warm bubble bath for little Jude Isaac.

When he was tucked in and deep into his sleep, Carly and I had our girl talk time over mini cups of ice cream and nail polish.

In the morning, we started the day with fresh juice from the trees out back.

We have so many fruit trees in my moms back yard my whole life…I don’t know how we don’t have one of these pickers…this is a must!

Off to the pool we go!

The last time we were here, Jude was just learning to walk. He has grown so much!

I didn’t want my little honey to get burned so he was in the pool with his dodger hat.

I bought Jude’s vest at CVS for $20.

My hat was from FOREVER21 and Swim suit from WalMartBelieve it or not, Carly found this swin suit at the 99CENT store! I was shocked!

So blessed to have my son in my life.

I had such a great time. I didn’t want to leave.

Its a home away from home.
